Peanut Butter Fudge Cookies



These cookies are very easy to make! The basis of this recipe is a cake mix, eggs, oil and chocolate or peanut butter chips. Yum. 

Peanut Butter Fudge Cookies

Ingredients:
1 box Yellow cake mix
1/4 c Cocoa powder
2 Eggs
1/3 c Vegetable oil
1 bag peanut butter chips (or 1/2 bag peanut butter chips with 1/2 bag chocolate chips)


Directions:

1.  Mix together all ingredients.

2.  Bake 350 degrees for 9-12 minutes. Makes 2-3 dozen depending on size.








Peanut Butter Glaze:

Ingredients:
1/2 cup peanut butter chips
2 TBSP butter
1 TBSP milk


Directions:

1.  Melt together on low heat.
2.  Drizzle over cookies.

Calzones





Sorry about the lack of posts lately. With school finishing and a super long vacation, blogging has taken a back seat.



This is a great recipe for summer since you only cook for about 10-15 minutes. You can also get very creative and let everyone make their own (meaning less work for you!) Enjoy!


Ingredients:
1 TBSP Yeast
1 tsp salt
1/4 c olive oil
1 1/2 c warm water
4 cups flour
Pizza toppings (including sauce, cheese, pepperoni, etc.)

Directions

1.   Dissolve yeast in 1/4 c warm water and let stand for 10 minutes. While yeast is activating, combine flour and salt in a bowl and make a well.

2.  Pour yeast mixture, remaining water and oil into well and mix to form a ball. Knead until smooth. Cover and let rise until double (about 45 minutes).

3.  Preheat oven to 500 degrees. Punch down down and divide into 6 equal parts. Roll each part into a 10 inch circle.

4.  Assemble your calzone. Put about 2 T sauce on half of the dough, leaving space around the edges to seal. Fill calzone with pepperoni, cheese, ham, sausage, onions, mushrooms, peppers, olives, or whatever else you choose!

5.  Fold in have and seal the edges with a fork or your fingers by pinching dough together. For extra taste, brush top with olive oil then sprinkle with Parmesan cheese and Italian seasonings.

6.  Cook at 500 degrees for 10-15 minutes. Let cool 3-5 minutes before serving.




The calzone pictured up top had alfredo sauce, chicken, bacon and mozzarella cheese.

The picture to the right had alfredo sauce, mozzarella cheese, and mushrooms.

The picture below had pizza sauce, pepperoni and mozzarella cheese.

Chocolate Chip Cookie Dough Cupcakes


Cookie Dough Cupcakes, stuffed with cookie dough and frosted with cookie dough frosting. Yum.


Sorry for the lack of posts lately. I have been super busy with school ending, family visiting, etc. These cupcakes are absolutely amazing! They do take quite a bit of work but I think it is completely and entirely worth it!


I can't take any credit for this recipe. I followed it exactly from Annie's Eats Blog. I love her blog but I have only had time to make a few of her recipes. Here is the Chocolate Chip Cookie Dough Cupcakes recipe.


Maybe I will get a few more recipes up on this blog sometime soon, but until then enjoy these cupcakes.

Cookie Dough Truffles


I found a great recipe for Cookie Dough Truffles that my family LOVED! I may or may not have spent about 5 or 6 hours reading the "How Sweet It Is" blog and bookmarking recipes to try.


You probably will want to make these as soon as possible! They are easy, taste amazing, and are quite fun if I do say so myself. Enjoy!

Enchilada Cassarole


Enchilada Casserole:
Ingredients:
1 lb ground beef
1/2 onion minced (or 2 T dried minced onions)
1 can corn
1 can tomato soup
1 can cream of chicken soup
1 cup milk
12 tortillas (about)
1/2 cup cheddar cheese

Directions:

Brown hamburger and onion together, drain, and return to pan.

Add corn, and tomato sauce to hamburger mixture. Heat thoroughly.


Spray or grease a 9x13 pan. Heat oven to 350 degrees.

Mix together cream of chicken soup and milk. Spread about 2 T of mixture in the bottom of your pan.

Layer 1/2 tortillas in the bottom of the pan. Spread meat mixture over the tortillas.


Cover with remaining tortillas. spread remaining chicken soup mixture over the top, then sprinkle cheese on the top.


Cover with foil and bake 30-40 minutes until cheese is melted and casserole is heated through.

 

Serve with shredded lettuce, sour cream, salsa, chopped tomatoes, etc.

Oreo Cheesecake - easy

Oreo Cheesecake:
Ingredients:
1 cup crushed Oreo cookies (about 12 cookies)
1 TBSP butter, melted
4 packages cream cheese, softened
1 cup sugar
1 tsp vanilla
4 eggs
20 Oreo cookies, quartered

1.  Mix crushed cookies and butter. Press in the bottom of a 9 inch spring form pan. Bake at 325 for 10 minutes. (I cheated and bought 2 Oreo cookie crusts instead).


 2.  Beat cream cheese, sugar and vanilla with electric mixer on medium speed until well blended. Add eggs, 1 at a time, mixing on low speed after each addition just until blended. Gently stir in quartered cookies. Pour over crust. (If using pre-made crusts, split cream cheese mixture into the two pie crusts.


3.  Bake at 325 for 1 hour or until the center is almost set. Run knife or metal spatula around rim of pan to loosen cake; cool before removing rim of pan. Refrigerate 4 hours or overnight (overnight is best). Garnish with additional cookies or whipped cream if desired.

Reese's Peanut Butter Bars (no bake)


I found this recipe on Our Best Bites. It is quite amazing and always requested when we are looking for dessert ideas.

Reese's Peanut Butter Bars (No Bake)
 (adapted from Our Best Bites)

1 1/2 C graham cracker crumbs
1 lb (3 1/2 C) powdered sugar
1 1/2 C creamy peanut butter
1 C (2 sticks) real butter, melted
1 12oz bag chocolate chips (milk, semi-sweet, or dark, you pick!)
2 tsp peanut butter

In a large mixing bowl, combine graham cracker crumbs, powdered sugar and peanut butter and butter and beat until combined. Press into a parchment (or waxed paper or foil) lined 9 x 9 square pan. If you want them thinner, use a 9 x 13 pan.

Place chocolate chips and 2 tsp peanut butter in a microwave safe bowl and heat in 30 second intervals, stirring after each one, until melted and smooth. Pour chocolate over peanut butter mixture and spread out evenly. Place pan in the fridge just until chocolate is set and then cut into bars.

Tip:  If the bars chill until the chocolate is too hard to easily cut, use a hot sharp knife and score the cuts first, then gently cut through.  Can be stored in the fridge or at room temp.  They will stay firmer if stored in the fridge.

Toasted Raviolis










Toasted Ravioli
Ingredients:
1/2 package meat or cheese ravioli (thawed)
1 beaten egg
2 TBSP milk
3/4 cup Italian seasoned bread crumbs
1/4 cup grated parmesan cheese + more for garnish (optional)
3 cups vegetable oil for frying
1 jar marinara sauce for dipping

Directions:
1.  Combine milk and egg in a small dipping bowl. In a separate bowl combine bread crumbs and 1/4 cup Parmesan cheese (optional).


2.  Dip thawed ravioli in egg mixture then in breadcrumbs.


3.  In a large heavy pan, pour oil to depth of 2 inches. Heat over medium heat until a small amount of breading sizzles and turns brown. Fry breaded ravioli in oil, a few at a time, for 1 minute on each side or until golden brown. Drain on paper towels. Sprinkle with extra parmesan cheese (optional).


4.  Serve immediately with heated marinara sauce.


Tip: If you want to make a few packages at a time they freeze very well. Store in a freezer bag until ready to use. To warm: heat on cookie sheet in a 450 degree oven for 5-10 minutes on each side. They will taste freshly made and wonderful!
