Macaroni Noodle Casserole

While most kids dream of having pizza, ice cream and cake for their birthday, I dreamed of having this casserole. Yes, I am a dork - but I just really love cheese, macaroni, and chili powder!

Mix together the following on Medium heat:

-1 lb browned and drained hamburger meat
-2 cups macaroni noodles cooked to al dente (2 cups before cooked)
-1 cup of shredded cheese (you will need 1/2 cup later)
-2 cans tomato soup
-1 to 2 tsp chili powder (not pictured)

Heat on medium heat for about 10 minutes until warm. If you want you may eat it at this point (preferably not straight out of the pan, although I will admit one time I was super hungry and just grabbed a spoon and started eating - less dishes right? )  . . .

-- OR --

Put in a greased casserole dish, sprinkle 1/2 cup cheese on top, and bake 350 degrees for 20-25 minutes. I like putting it in the oven when I'm in a "crunchy dinner" type of mood.

Taco Salad

Every Tuesday in our house we have "Taco Tuesday"...  we like to have tacos, chicken tacos, taco salad, fajitas, and sometime even enchiladas. (I know they aren't tacos, but we have to mix it up a little).  My favorite is taco salad.  I love adding all kinds of veggies to it to make it nice and healthy!  I know every one can easily make taco salad, and you don't really need a recipe, but I wanted to share some of the fun things I like to add on top!

I start with fritos because they are much easier to eat with a fork than regular tortilla chips.  Then add my hot stuff..... meat (ground beef seasoned with taco seasoning), black or pinto beans, and corn.  Then I add cheese so it can get all melty...

Next, I add all the cold stuff.... lettuce and veggies.  Here's what I like on mine:

lettuce, tomatoes, avocados, green peppers, carrots, cucumbers, and cilantro.

You can also add a dallop of sour cream...

Top it off with some dressing, salt and pepper and you are done!

Enjoy!!!  And get creative with your salads.  No more boring taco salad!
Have fun and be healthy while you are at it!

Tator Tot Casserole

Sometimes you just don't have time or the energy to cook a real dinner.

This casserole is super versatile - you can put just about anything you want in it and it still will be super yummy. We have added garlic, onions, dried minced onions, corn, beans, just about any vegetable, etc (the list could go on forever).

Here are the basic layers - feel free to "mix and match" with anything you have sitting around your kitchen

Bottom: Tator tots (you could also do some french fries or other potato) I noticed that if I lined the tots up in the bottom I can fit the same exact amount of tots as in a random pattern, so next time I'm not going to waste the time to line them up like I did here.

Next up: browned and drained Hamburger meat - this is the best place to add in the onions

Then: corn, beans, any vegetable. You could be like my momma and do half and half so the corn lovers and the bean lovers can each have their favorite! ( I didn't get a picture of this - sorry)

Top that off with some cream of chicken + sour cream mixture. If you want it more creamy and goopy add more, if you like it more dry - add less. Instead of cream of chicken I have used cream of mushroom and it is also amazing.

Finish it off with some grated cheese. I like cheddar or a mix of cheeses that I find in my fridge!

Enjoy!

Tator Tot Casserole

Ingredients:
1 bag tator tots (I use a little less)
1 lb hamburger meat, browned and drained
sprinkle of garlic salt
sprinkle of onion powder
2 cans vegetables (if using frozen make sure they are thawed)
1 can cream of chicken (sub in cream of mushroom)
8 oz sour cream
1 c grated cheese

Directions:
Preheat oven to 350 degrees.
Spray or grease a 9x13 inch pan.
Layer a row of tator tots in the bottom.
Spread hamburger meat on top of tots, sprinkle spices on browned meat.
Layer vegetables next.
Mix cream of chicken and sour cream together and spread over vegetables.
Top with grated cheese.
Cover pan with tin foil, bake at 350 for 45 minutes until warm through.

Easy and Basic Sloppy Joes

This is probably the easiest sloppy joe recipe out there (besides buying the packet of sloppy joe seasonings).

All it takes is some hamburger, tomato soup and mustard.

If you would like to be more creative you can add more ingredients such as onions, brown sugar, garlic, chili powder, etc.

Enjoy!

Easy and Basic Sloppy Joes

Ingredients:
-1 lb hamburger; cooked and drained
-1 can tomato soup
-1-2 TBSP mustard
-hamburger buns
-slice of cheese

Directions:
Cook and drain the hamburger in a frying pan. Clean out the grease from the frying pan. Add hamburger, tomato soup and mustard to pan, cook on medium-low for 5-10 minutes until warm. Serve on a bun with a slice of cheese.
